Nestled in a back alley of Fukushima, Osaka, is "Sushi Chiharu."
In collaboration with the Food Service Professionals University, a training institution for sushi chefs, young chefs who will carry the future of Japanese food culture are earnestly engaging with the traditional techniques of Edomae sushi.
On the first floor, you can enjoy Edomae sushi casually, surrounded by the enthusiasm of these young chefs. On the second floor, you can enjoy a more refined course menu for a special moment.
We will continue our efforts to make authentic Edomae sushi more accessible and enjoyable for everyone.

Edomae sushi is a general term for nigiri sushi made with fresh seafood caught in Tokyo Bay (Edomae), with a special touch added by the chef — such as pickling in vinegar, marinating in soy sauce, or simmering. It originated as street food in the late Edo period and is the root of modern nigiri sushi as we know it today.
We had foreign guests try Sushi Chiharu's Edomae sushi. It is popular even with guests from countries where eating raw fish is not customary — "It's delicious because it uses fresh fish." Many are also drawn to the concept itself: "Sushi is made small, with many types of fish, flavors, and shapes — I love the concept of sushi."

The restaurant is intimate, with only counter seats surrounding the kitchen.
